Tom Ka Gai Thai Chicken Coconut Soup



A quick and tasty Thai chicken coconut soup made with herbs and spices that smell great. Perfect for a tasty and comforting meal.

Ingredients:

  • 1 lb boneless, skinless chicken thighs, thinly sliced
  • 1 can 13
  • 5 oz coconut milk
  • 4 cups chicken broth
  • 1 stalk lemongrass, bruised and chopped
  • 3 kaffir lime leaves
  • 2 inches galangal or ginger, sliced
  • 2 red bird's eye chilies, sliced
  • 1 cup mushrooms, sliced
  • 3 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • Juice of 2 limes
  • Fresh cilantro leaves for garnish

Instructions:

Chicken broth, lemongrass, kaffir lime leaves, galangal or ginger, and bird's eye chilies should all be put in a pot together

Over medium-low heat, bring to a boil

Put mushrooms and sliced chicken in the pot

Make sure the chicken is fully cooked

Soy sauce, lime juice, brown sugar, and fish sauce should all be mixed in

Let it cook for five more minutes

Take out the ginger slices, lemongrass, and kaffir lime leaves

Add fresh cilantro leaves on top and serve hot

Ingredients:

  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese

Put the mixture in a baking dish

Put the dip in the oven and bake for 20 to 25 minutes, or until the top is bubbly and golden brown

Warm it up and serve it with crackers or tortilla chips

Add a slice of cheddar cheese to each patty and let it melt in the last minute of cooking

Put mustard and ketchup on the top bun, and then add pickles

Almond-Cardamom Cream Cheese Cookies

  • 1 cup almond flour
  • 1/2 cup cream cheese, softened

Instructions:

Add the egg, vanilla extract, and ground cardamom and mix them in well

Mix the all-purpose flour, salt, baking powder, and almond flour together in a different bowl

Mix the dry ingredients into the wet ingredients one at a time until a dough forms

Do not mix too much

Cover the dough with plastic wrap and put it in the fridge for at least an hour

Warm the oven up to 350F 175C and put parchment paper on a baking sheet

Take dough balls about the size of a tablespoon and roll them into balls

Spread them out on the baking sheet that has been prepared

Use the bottom of a glass or your hand to gently press down on each dough ball

Add some sliced almonds to the top of each cookie

Take the cookies out of the oven and heat it up

Bake them for 10 to 12 minutes, or until the edges are golden brown

After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet

Then, move them to a wire rack to cool all the way down

Compota de Laranja e Anis

Ingredients:

  • 6 laranjas
  • 2 estrelas de anis
  • 500g de acar
  • Sumo de 1 limo

Instructions:

Descasque as laranjas e retire as sementes

Corte a casca em tiras finas

Em uma panela grande, coloque as tiras de casca de laranja, o sumo de limo, o acar e as estrelas de anis

Cozinhe em fogo mdio, mexendo ocasionalmente, at que o acar se dissolva completamente

Reduza o fogo para mdio-baixo e deixe a compota cozinhar por cerca de 45 minutos, mexendo de vez em quando, at que a mistura esteja espessa e as cascas de laranja estejam macias

  • 1 kg potatoes, peeled and diced
  • 500g ground beef
  • 1 onion, chopped

  • 1 cup peas
  • 1 cup corn kernels
  • 2 tablespoons olive oil

Instructions:

First, boil the potatoes until they are soft

Then, use a potato masher or fork to mash them

As you add the ground beef, use a spoon to break it up

Cook until it turns brown

Bell pepper, corn, tomatoes, and peas should all be added now

Pumpkin Fry Bread



Like pumpkin? You can air fry this Pumpkin Fry Bread all year long. These tasty pieces of fried bread taste great with pumpkin spice and are great as a snack or dessert.

Ingredients:

  • 1 cup canned pumpkin puree
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 2 tablespoons granulated sugar
  • 1/2 cup milk
  • Oil for frying vegetable or canola oil

Instructions:

Put the pumpkin puree from a can, flour, baking powder, salt, ground cinnamon, ground nutmeg, ground cloves, and granulated sugar in a large bowl

Mix until you get a dough

Little by little, add milk to the dough until it comes together and is a little sticky but workable

It's possible that you won't need all 1/2 cup of milk

Place the dough on a floured surface and knead it slowly for a few minutes, until it's smooth

Shape the dough into discs or rectangles that are about 1/4 inch thick

Next, divide the dough into small pieces

Get the oil in your air fryer to 180F 350F

Place the shaped pieces of dough carefully into the hot air fryer basket, making sure they don't touch each other

The pumpkin fry bread should be air-fried for four to five minutes on each side, or until they are golden brown and puffy

Depending on how big your air fryer is, you might have to do things in groups

Take the pumpkin fry bread out of the air fryer and lay it on paper towels to soak up any extra oil

If you want to serve the pumpkin fry bread warm, you can do so with powdered sugar, cinnamon sugar, or as is
