Ingredients:
- 1 kg potatoes, peeled and diced
- 500g ground beef
- 1 onion, chopped
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 cup peas
- 1 cup corn kernels
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 cup beef broth
- 1/4 cup chopped fresh cilantro
- 1/2 cup grated cheese
Instructions:
First, boil the potatoes until they are soft
Then, use a potato masher or fork to mash them
Warm up the olive oil in a big pan over medium-low heat
Put in the garlic and onions, and cook them until they become clear
As you add the ground beef, use a spoon to break it up
Cook until it turns brown
Bell pepper, corn, tomatoes, and peas should all be added now
Put it in the oven for 5 minutes
Add paprika, cumin, salt, and pepper to taste
Add the beef broth and let it cook for another 10 minutes
Set the oven to 180C 350F and heat it up
Cover the bottom of a greased baking dish with half of the mashed potatoes
On top of the mashed potatoes, put the beef mixture
Add half of the grated cheese and chopped cilantro on top
Use a spatula to smooth the top of the remaining mashed potatoes
Cover the top with the rest of the cheese
Put it in an oven that is already hot and bake for 25 to 30 minutes, or until the cheese melts and bubbles
Enjoy while hot!
